Tonight my dh was craving veggies and I had nothing planned, so I went to work on a fast and yummy dinner.
I started with spinach and lettuce in a bowl, I grated carrots and Daikon root.
Then, I boiled a whole artichoke.
While that was boiling I put edamame beans, mushrooms, black eyed peas, brown rice, and sunflower seeds in a pan with a bit of olive oil and sea salt.
After the veggies were heated, I added balsamic vinaigrette dressing and simmered it for about seven minutes.
I mixed the warm veggies with the cold veggies and served that as a dish, then served the artichoke with guacamole.
We were both pleasantly surprised. It was a scrumptious meal, and a very fast one to make.
