Icebox Cake
2 small boxes of instant vanilla pudding mix
1 8 oz container Cool Whip, thawed
3 C milk
1 16 oz Box Graham crackers
1 16 oz container chocolate frosting
In a bowl, mix together the pudding, Cool Whip and milk
Place a layer of crackers in a 9x13 pan. Spread half the filling on top of the crackers. Add another layer of crackers and spread the remaining filling. Top with a final layer of crackers.
Microwave frosting for 30-40 seconds and then pour on top, spread with a spoon, if necessary. Cover and chill at least 4 hours before serving. YUM!
HINTS: If you want to eat it right away, dip crackers in milk before putting in pan. You can sneak in some fruit too. Of course, you can use any flavor instant pudding you like, does not have to be vanilla.
This is a fun desert for kids to make and there is minimal clean up.
